The much talked about ham in cola recipe!
We took ours from the Jamie Oliver cook book (altered slightly for our taste) and did the first part of the recipe in the slow cooker.
Serves 2-4 depending on size of meat.
Time: 15 min prep in total, 3-5 hours slow cooker, 25 min oven
Ingredients
3 kg unsmoked Ham or Gammon (I just had a gammon joint from the butcher)
4 litres Cola (or just enough to fill slow cooker after meat added, we only needed 2 litres. DO NOT USE Diet Coke! There have been reports of it exploding!! I kid you not!)
1 Onion, quartered
2 Star Anis
4 Cloves (optional, I didn't use them)
4 Black Peppercorns (Optional, I didn't use them)
1 tsp cinnamon
1 tsp ground ginger
1 tblsp Soy Sauce
1 tblsp mustard (Any)
2 tblsp demerara sugar
4tblsp runny honey
1. If you know your meat is salty you will need to place in a saucepan with cold water and bring to boil for 5 mins to get rid of salt. If not salted (our butcher one wasn't) just rinse under some cold water first.
2. Place meat in slow cooker with onion, star anise and peppercorn (if using) and cover with coke. Set on low for 5 hours or high for 3. (You can also do this step on a hob, just place in a big pot, bring to boil then heat on very low for 3 hours with a tightly fitted lid)
3. Remove the meat and place on a plate to cool a little. Discard all the coke liquid.
4. Pre heat oven to 170 C.
5. Cut slices into the top of the meat a cm or 2 down and press in cloves (if using. in a checked pattern. Still cut even if not using cloves, it helps the glaze soak in)
6. Mix the Soy Sauce, Mustard, Demerary Sugar, Ground Ginger, Cinnamon, and runny honey in a bowl, give it a really good stir till well mixed.
7. Brush over entire meat. Put meat in roasting tin and roast for 25 mins (I brushed the juiced from the tin over the top again half way through).
8. Remove from oven, top should now be sticky. Slice and serve with your choice of veggies or in a sandwich!
Top Tip: You can also add some veggies to the roaster while roasting the meat so they get the yummy sticky glaze too! I added carrots and red pepper, and just gave them a good stir to cover them in the sticky sauce too.
I would give the recipe a 5 star! it is really easy to do and really yummy! Well worth the 3-5 hours wait!
